Essence Food is a company dedicated to innovation in the gastronomic world, which researches, develops and implements the latest trends and technologies related to the world of food, trying to improve all processes from cultivation to consumption, creating a more sustainable, smart future gastronomy.

 

We want to contribute to a situation in which all people, at all times, have physical and economic access to sufficient, safe, and nutritious food. Our goal is then to make this type of niche market accessible to ensure that human rights are being fulfilled in terms of having the right to meet their dietary needs and food preferences for an active and healthy life. In order to scale-up and abate our impact, 3D Essence Food’s priority is to create a collaborative network to join forces towards global food security and sustainability. For this reason, we believe in a mutually beneficial exchange of knowledge and value in fairs, conferences, accelerator programmes, talks and as well as webinars.

Circular economy applied to the food supply chain

3D Essence Food is a company dedicated to bringing disruptive food technology to the market with Zero Hunger and 360° Sustainability goals.

We can close the circle using what we get rid of as a basis for what we need, relying on a novel approach of food design, where innovative cutting-edge technologies enable sustainable provision of top quality nutrition.

3D Essence Food upcycles fruits and vegetables losses, by doing so we enhance the value from what would otherwise end up in landfills. We set the bridge between food losses and global malnutrition, using what food products often hide, like vitamins and minerals.

Our project revolves around the use of production surpluses to curb food waste and generate new formats of food with high nutritional value. With a perfected dehydration technique already tested among consumers, these new products retain all their organoleptic qualities even in adverse weather conditions for a long period of time exceeding 5 years.

Farmers

Farmers confront a host of challenges that result in substantial food loss. For instance, fruits and vegetables that don’t meet aesthetic standards often go unsold, while unpredictable weather conditions can damage crops. Over-ripeness leads to spoilage before produce can reach consumers, and local overproduction can create a glut in the market, resulting in low prices and uneconomical harvests. These factors cumulatively contribute to a substantial amount of food loss at the farming level.

Food Manufacturers

Food manufacturing is a complex process involving a multitude of stages, each of which contributes to food loss. Most notably, during the preparation and processing phases, a great deal of food is lost through the discard of byproducts. These include the outer layers, seeds, and cores of fruits and vegetables. Despite being rich in nutrients and fibers, these elements are often deemed unsuitable for the final product and thus, end up in waste.

Distributors

Distributors, logistics companies, traders, and wholesalers play a crucial role in the food supply chain, but this journey is not without its perils. Poor handling and damage during transport can lead to significant food loss. Moreover, a broken controlled environment or inadequate chilling can spoil the produce. At times, broken cargo contracts lead to food wastage, and long transport times can further exacerbate the risk of spoilage.

Retail

Food loss in the retail and hospitality sectors often occurs when consumption falls short of projections, leading to excess food that cannot be adequately stored due to limited chilling capacity. Additionally, the common practice of discarding foods that are imperfect on one side adds to this waste. These factors, among others, contribute to a significant volume of food loss, impacting both the environment and the bottom line.

By reducing water content from the usual ~90% to a few, the time becomes frozen. Even mature berries can be stored for multiple decades, meaning you have ample time to connect with delighted customers who appreciate the exceptional flavor and nutritional benefits.

This not only saves the invested money and resources but might reduce the need for future production, which contributes to environmental and social sustainability.


Our solution not only retains the aromatic properties and beneficial ingredients of the berries but also ensures their preservation until they come into contact with oxygen and water again. In fact, our technology adds value to regular foods as well, utilizing quantities that would otherwise go to waste due to logistical issues, decreased aesthetics, or economic inefficiencies. The best part is, there are no disadvantages to using these surplus amounts.

Thanks to the vacuum, low (even below 30 Celsius) temperatures, and rapid process, our method better retains vitamins, nutrients, Omega-3, enzymes and polyphenols than any drying method. Lyophilized foods retain their inherent health benefits to a remarkable extent. These foods are healthy and can be sustainable in environmental, social, and financial terms.

The earlier in the supply chain, our process is applied, the more energy is saved as no cold chain will be needed, and water isn’t transported to areas where it is cheaply available (saving 85% weight and 40% storage).

We have energy-efficient machines, meaning even 80% overhead reduction compared to other manufacturers.

These nutrient-rich products can be enjoyed on their own as a healthy snack, pressed into bars for convenient consumption, or incorporated into a wide array of dishes, pastries, and granola recipes.

 

For added convenience and innovative applications, these fruits and vegetables can be easily transformed into powdered form. This opens up a whole new world of possibilities, including instant food options, unique flavor combinations, biscuits, creams, and even the exciting realm of 3D printing. With 3D printing, the possibilities for intricate and personalized designs are limitless, allowing for customized units that can be automatically designed and produced, even supported by AI.
